Crepes Suzette
Serves 6

6-8 Traditional Crepes
2 teaspoons Sugar
Zest of one Orange
3 tablespoons unsalted Butter, softened
2 tablespoons Confectioner’s Sugar
1 tablespoon Orange Juice
1 tablespoon Orange Liqueur
2 tablespoons melted Butter
2 tablespoons Brandy

• Mix sugar, zest, and 3 tablespoons butter. Mix in confectioner’s sugar, orange juice, and liqueur. Brush baking dish with melted butter. Add crepes folded into quarters and keep warm at 350°F. Spread warm crepes with orange butter and leave in oven. Heat brandy remove dish from oven, pour brandy over and ignite.

Serve immediately.
